Question: "Should I use light or dark rum for our tropical
frozen drinks?"
Answer: As the summer heat scorches our brains, we dream of
cool, tropical frozen concoctions made with rum. Your choice of light or
dark rum really depends on your preference (or your pocket book!). Most
light rums are produced in southern Caribbean Islands such as Puerto Rico or
Trinidad. Usually, they are aged no longer than 6 months in oak casks.
The dark rums are produced in tropical islands like Jamaica, Haiti, and
Martinique, where they are aged from 3 to 12 years for a more aromatic and
richer flavor. The dark color comes mostly from added caramel or molasses,
not from the cask. Also, keep in mind how a dark rum may change the color
of lighter colored drinks like Pina Colada.
