Ask The Margarita Man...

Man, Mike Laymon:
Question: "My
daughter wants frozen margaritas at her wedding reception. Are there any
special considerations for an event like this?" Answer:
Wedding receptions (or any event where your guests arrive "all at once") usually
prove to be a challenge when serving frozen drinks - in fact, we call it the
"Wedding Reception Syndrome". The first thing your guests do is head for
the beverages and the demand can easily exceed the freezing capacity of the
machine. Here are a few tips to minimize or avoid this issue:
•
Rent one machine for every 50-60 drinking adults; we usually recommend one
machine for every 70-80 drinking adults - the lower demand per machine will help
keep the drinks frozen.
•
Hire a server to pour the frozen drinks; either ask your caterer to provide a
staff member to serve the frozen drinks, or ask a friend to supervise the
machines for the first 30-45 minutes of the reception. After the first
rush, the machine(s) should be fine.
•
Have the server "pre-pour" the drinks into a pitcher or cups just before the
guests arrive. Use the pitcher to serve the first guests while the machine
is re-freezing additional drinks.
